Ingredients
3 ripe bananas
½ cup canola oil
¾ sugar
3 eggs
½ tps salt
1 cup all-purpose flour
½ cup whole wheat flour
2 tb ground almonds or almond flour
¼ tsp salt
1 tsp baking powder
½ tsp baking soda
Preparation
Step 1
Mash bananas in a large sized bowl (a fork or potato masher works well)
Add canola oil, eggs, vanilla to bananas and mix well
Add sugar and mix again
Step 2
Combine flours, almond flour, salt, baking soda, baking powder and almond flour in a second medium sized bowl
Step 3
Add dry ingredients to wet and combine until just mixed (do not over mix)
Step 4
Scoop batter into lined muffin cups
Bake at 350 degrees for 20 minutes or until tooth pick in center of muffins comes out clean
Yield: Makes approximately 12 medium-large muffins
