Ingredients
1/2 cup canola oil
2 tsp vanilla
1 cup sugar
3 eggs
2 1/2 cups flour
1 1/2 cups Rogers Original Porridge Oats & Healthy Grains or oatmeal
2 tsp baking powder
1/2 tsp salt
Preparation
Step 1
Pre-heat oven to 350 F
Step 2
In a large bowl, beat together sugar, canola oil, and vanilla until well mixed.
Step 3
Add eggs and beat well.
Step 4
In a separate large bowl, combine flour, Healthy Grains or oats, baking powder, and salt.
Step 5
Add dry ingredients to wet ingredients and combine into a ball.
Step 6
Remove dough from bowl and wrap in plastic wrap. Refrigerate for 1 hour or overnight.
Step 7
Roll out dough on floured board and cut out cookies using favourite cookie cutouts or cut into 3″ squares with a knife.
Step 8
Place cookies on a parchment lined cookie sheet.
Step 9
Bake for 15 minutes or until golden brown.
Enjoy with a serving of antioxidant rich berries! Great for a quick breakfast or snack on the go.
