Ingredients
1/2 cup canola oil
1/2 cup white sugar
1 large egg
1/4 cup molasses
1 1/4 cups flour
1/4 cup wheat bran
1 tsp baking soda
1/2 tsp salt
1 tsp ginger
1/4 tsp cloves
1 cup large or small flaked oats (set aside 1 tbsp to garnish cookies)
Step 1
Preheat oven to 350 degrees.
Step 2
In a large bowl whisk together the canola oil, sugar, egg, and molasses until the sugar is dissolved.
Step 3
In a second large bowl mix together flour, wheat bran, baking soda, salt, ginger, and cloves.
Step 4
Add canola mixture to dry ingredients until combined, then add oats and mix well.
Step 5
Measure approximately 1 tablespoon portions of cookie dough and roll into balls. Then press flat on a parchment lined cookie sheet. Sprinkle cookies with remaining oats and press into cookies before baking.
Step 6
Bake at 350 for approximately 8-10 minutes. Oven temperatures vary. Cool on a wire rack and enjoy!
